Yummy Yummy Rabbit Recipe!

Harvesting Meat Rabbit. It does show the butchering process, so don't view if you get queasy at the sight of blood!:

Barbecued Rabbit

Lay the rabbit in salt and water half an hour, scald with boiling water, wipe dry, grease with butter, and sprinkle with pepper and a little salt. Lay it on the gridiron, turning often so that it may cook through and through, without becoming hard and dry. When brown, lay on a hot dish, butter plentifully on both sides, and add a little salt and pepper. Set in the oven, while preparing four teaspoonfuls of vinegar, one of made mustard, and one of currant jelly or brown sugar. Pour this over the rabbit, rubbing it in, then pour over the gravy and serve hot.

Ingredients

    Venison Steak or Butterflied Back-straps
    Butter or Margarine 
    1/2 a sweet Vidalia Onion
    Worcestershire Sauce

    Directions

    Add the butter or margarine to the skillet to melt the butter. Then add thinly sliced onion until the slices begin to caramelize. Next add your venison steaks and the Worcestershire sauce to the frying pan and fry them in the butter and onions until the venison is medium rare. Try not to overcook the steaks.

    Venison is a lean, healthy and good tasting protein source and can become a healthy part of your diet. Enjoy!

Fall Squirrel down.....time to eat! I am going to check in with Uncle Millie for any other good squirrel recipes!




 Country style squirrel

  • 2 squirrels
  • Salt & pepper to taste
  • Flour
  • 6 tbsp. vegetable oil
  • 2 c. water
Cut squirrel into frying size pieces, salt and pepper then roll in flour until coated well. Put in skillet of hot oil and fry until golden. Remove squirrel and most the oil, then add water and bring to boil. Place squirrel back into the skillet, turn to low heat, cover and cook for approximately 1 hour.
